The average yield is about 25 to 30 hl/hectare. During the harvest the mandatory selection of the grapes is done twice by hand. Our Châteauneuf-du-Pape red is produced traditionally. The wine is steeped for approximately three weeks in order to integrate the necessary tannins and maximise the fragrance prior to ageing. The 

different grape varieties are then blended to obtain the best possible balance. Château Cabrières reds have a beautiful, rich ruby colour with a full but not heavy aroma. Their fragrance is typical of Châteauneuf, reflecting the scents of the soil. The wine is then stored in barrels for twelve months before being bottled.
The “Cuvée Prestige” is produced from the oldest vines, to be found at the rear of the Chateau, which were planted in 1900 and include 13 varieties of grapes. Its low yield of only approximately 12 hl/hectare provide the powerful aromas and strength to produce a rare cuvee of exceptional quality.... Château Cabrières are amongst the greatest of the Châteauneuf-du-Pape wines and have been awarded many gold/silver medals and highly recommended from international well-known wine critics. 

The old castle, situated in the middle of the Château Cabrières, in the heart of the vineyard, has been in existence for a very long time. Indeed, the door of an oven has been discovered whose chipped stone appearance indicates the techniques of the 14th and 15th centuries. This proves the historic nature of the Chateau and also of its vine stock, both of which benefit from the flinty nature of the local soil, where vines have been planted since 1344. For many years the Chateau has belonged to the Arnaud family, who have devoted their lives to the wines and barrels of Châteauneuf-du-Pape for centuries.
